CHICKEN SATAY WITH WALNUT BUTTER SAUCE

A delicious and Omega-3 packed twist on a Thai classic!

In a blender or food processor, combine:
1 cup original walnut butter
1/4 cup soy sauce
2 tsp red chili paste
1 tbsp dark brown sugar
the juice of 2 limes
up to 1/4 cup hot water if needed

Add chopped walnuts and cilantro for garnish.

Chicken marinade:
1 cup plain Greek yogurt
1 tsp freshly grated ginger
1 tsp minced garlic
1 tbsp curry powder

Coat chicken strips and marinate in fridge for 2 hours. Weave onto wooden skewers and grill.
