GLUTEN FREE WALNUT BUTTER & JELLY MUG CAKE

This gluten-free walnut butter and jelly mug cake takes only a few minutes to whip together and satisfies that childhood comfort food craving!

1/4 C walnut butter
1 T brown sugar
1 egg
1/4 t baking powder
1 pinch of salt

Blend until smooth, then swirl in 1 tablespoon of your favorite jelly, and microwave on high for 60 seconds. Toss in some fresh fruit and you have a perfectly fluffy and fudgey-textured mug cake!
