GRILLED CHEESE & WALNUT BUTTER WITH TOMATO BASIL SOUP

10 Roma Tomatoes
10 Cloves of Garlic
2 Onions
1 32oz Can Diced Tomatoes
Vegetable Broth
Large Handful of Basil
Olive Oil
Red Pepper Flakes, Salt & Pepper, to taste
Bread of choice
White Cheddar Cheese

Preheat oven to 425. Cut tomatoes in half, drizzle with olive oil, and place on a parchment-lined baking sheet. Peel garlic and toss with oil, and place on sheet with tomatoes. Roast for 45 min. Meanwhile, thinly slice onions, and caramelize in a large soup pot, deglazing periodically. Add roasted tomatoes, garlic, canned tomatoes, and stir together. Add vegetable broth until you reach your desired consistency. Chop most of the basil, and add, along with spices. Simmer while prepping the grilled cheese, then puree with an immersion blender when ready to serve. Garnish with additional basil.

Warm up a pan on medium-high heat. Slice bread and butter. Spread walnut butter on one slice, and stack cheese on the other. Grill until golden brown and cheese is melted. Dip and enjoy!
