VEGAN PUMPKIN WALNUT BUTTER COOKIES
Preheat oven to 350 degrees. Place the following ingredients in a large mixing bowl:
1 Flax Egg (1T flaxseed meal + 3T water)
1/2 C Walnut Butter (we chose Maple flavor!)
1/4 C Pumpkin Puree
2 T Maple Syrup
Beat until smooth, then add:
(and any other pumpkin pie spices you enjoy, to taste)
1/4 t baking soda
1/3 C flour (can sub out gluten-free options, if needed)
Beat together until a sticky dough forms. Form into round balls, dip tops in raw sugar, if desired, and place onto parchment-lined cookie sheet, flattening slightly. Bake for 15 minutes, or until starting to firm up. Remove from oven and allow to cool. Yields approximately one dozen cookies. Enjoy!
