NO-BAKE WALNUT BUTTER PIE
Set out cream cheese and walnut butter to reach room temperature. Preheat oven to 325 degrees.
CRUST
1 bag of chocolate cookies of choice
5 T butter, melted
Pinch of Salt
WALNUT BUTTER FILLING
1 1/2 C Wellnut Farms walnut butter
1 C powdered sugar
1/2 C cream cheese, softened
1/2 t vanilla
GANACHE TOPPING
1/2 C heavy whipping cream
1 C semi-sweet chocolate chips
Walnuts, roughly chopped
INSTRUCTIONS:
Crumble cookies in food processor or by hand. Add melted butter and combine, then press into a 9″ pie pan and freeze for at least 10 minutes. In a bowl or stand mixer, mix walnut butter and cream cheese until smooth. Add powdered sugar and vanilla and mix until well incorporated. Spoon the mixture into the crust, and place in the fridge to cool. For the ganache, add the chocolate chips and cream to a microwave safe bow. Heat in 10 second intervals until melted. Allow to slightly cool, then spread on top the of the walnut butter pie mixture. Garnish with chopped walnuts or any other goodies you’d like! Allow to set in fridge for at least 1 hour before serving.
