Marinade
- ¼ C lemongrass
- ¼ yellow onion
- 4 cloves garlic
- 1 t sriracha
- 1 T ginger
- ½ t turmeric
- 2 T coriander
- 1 T cumin
- ¼ c soy sauce
- 2 T fish sauce
- ⅓ C brown sugar
- 2 T vegetable oil
- 2 lbs chicken breast, cubed
Walnut Sauce
- 1 C walnut butter
- ⅓ C soy sauce
- 3 cloves garlic
- 2 T sesame oil
- 1” fresh ginger
- 1 t sriracha
- 2 limes, zested & juiced
Soak wooden skewers in water before cooking.
Add all the marinade ingredients other than chicken in a food processor and puree until smooth. Add chicken pieces and marinade anywhere from 30 min to overnight. Thread each piece of chicken onto a skewer, grill on high for 2-3 min per side. To make sauce, puree all ingredients together in a food processor until smooth. Garnish with sesame seeds and chopped cilantro.
